Our latest release comes from Cajamarca, Peru. Specifically, the Chirinos region which is a long-standing coop in Cajamarca known for their agricultural ingenuity and reliability. This specific coffee is the product of over 500 small holder farmers who harvest their coffees by hand and bring their fruit to a centralized plant for washing and processing.
Historically, Peru’s mild cup profile and relatively inexpensive prices have made the coffees an appealing blend component, especially as a season replacement for some other LATAM coffees. We wanted to highlight Peru as a single origin and look forward to the seeing more and more high-quality coffees emerging and becoming single origin lots that will be highly desired.
As and origin, Peru has all the conditions necessary to produce world-class coffee: its high elevation; prominence of good varieties like Typica, Bourbon, and Caturra; and a quality-focused movement among smallholder growers, especially in cooperatives utilizing organic husbandry. These coffees offer up a slightly softer profile with notes of cocoa, lemon, toffee, and caramel and subtle hints of soft fruits like plum and sweet cherry.
