Many of you have requested coffees from Costa Rica and we waited and waited until we found the perfect offering. Las Lajas might be a name you aren’t familiar with but it belongs to the founders of a micro mill owned and operated by Oscar and Francisca Chacon and it's where this beautiful coffee was sourced. Las Lajas is known for its innovative and forward thinking approach to processing coffee and Las Lajas was among the first to offer both natural and honey processed specialty coffees from Costa Rica.
The honey process involves taking the coffee cherries and processing them such that their mucilage (sticky pulpy substance, like honey!) remains attached to the beans. That" black" component is how that honey coffee is handled during the full drying phase. It is a laborious process that requires turning of the coffee once per day with long drying times.
The result is an extremely complex cup with lots of fruity flavors and nuance that are unique to both the terroir of the Central Valley and tireless efforts of the many hands that picked and processed this coffee. If this is your first time enjoying a honey processed coffee, it will be unlike any coffee you’ve ever smelled or tasted.
